We are heading to the spice market for some inspiration this fall! This piece should is sure to ignite your senses, Get ready for some fall seasoned fashion (pun intended)-lots of fresh looks from September’s Fashion Month, exotic aromatics from perfumes to candles, and flavors to savor that will warm you up during the crisp weather months.

Cacio e Pepe Popcorn

  • Open a bag of plain, unsalted/no butter popcorn.
  • In a saucepan, melt 3 tablespoons of unsalted butter. Then add ½ cup of finely grated Pecorino & Parmigiano Reggiano.
  • Grind a generous amount of black peppercorn with a pepper mill into the saucepan.
  • Put popcorn into a large bowl and drizzle over the decadent sauce.

Mineral Roasted Beets

  • Peel Beets & slice thin with a mandolin or into 1” cubes. Place evenly parchment paper over a cookie sheet.
  • Drizzle extra virgin olive oil onto beets and sprinkle over with coarsely ground pink Himalayan salt.
  • Bake at 375(F) for 30-45 mins. Toss beets around around half way. Serve with chopped Italian flat leaf parlsey or fresh thyme.

Spiced Sweet Baked Potato

  • Bake sweet potatoes at 400(F) for 45min-1hr, until fork tender. Cut in half when finished.
  • Place a thin slice of unsalted butter in the center and sprinkle over with ground cardamom.  Slightly mash until butter & Cardamom melt into potato.
  • Add toasted pumpkin seeds for added crunch and texture.

Risotto Milanese

  • Saute a large onion & salt with olive oil, then add 2 cups of Arborio rice for 3-5mins until it sticks to the pan.
  • Add 2-3 pinches of saffron into hot chicken broth. Stir 2 cups of dry white wine to rice & onion until absorbed. Add the saffron chicken stock and consistently stir.
  • Continue to add saffron chicken stock as the rice cooks and absorbs. Risotto should be creamy in texture & rice fully cooked.
  • Serve with grated Parmigiano Reggiano & flat leave Italian parsley.

Lebanese Za’atar

  • Mix together dried or fresh minced thyme (4pts), toasted sesame seeds (4pts), ground sumac (2pt), and course salt (1pt), extra virgin olive oil to desired consistency.

  • Melt unsalted butter until browned & thinned
  • Add sage leaves & remove from heat
